Medjool dates are carefully sorted by size (weight per fruit in grams) and the degree of skin separation (how loose the skin is from the flesh).
The size and skin separation of Medjool dates are purely visual factors. The internal quality, freshness, flavor and texture of the dates are the same for all sizes and skin separations.
